The Aviation is a classic cocktail made with gin, maraschino liqueur, crème de violette, and lemon juice. We have gone old school using a jar of marachino cherries as the flavour base rather than purchase another bottle of liquor. Some Aviation recipes omit the crème de violette but in this recipe we offer it as an option with our Lavender simple syrup which provides the floral notes in this drink and a light purple colour. If you desire the Aviation cocktail with a deep purple colour then simply add the crème de violette in step 3.
Ingredients
- 100ml Doctor gin Tiny Bear
- 50ml lemon juice
- 10 maraschino cherries (equivalent to 20ml)
- 30ml Lavender simple syrup
- 10ml crème de violette (optional)
- ice cubes
- maraschino cherries
- lemon peel
Instructions
- Chill two coupe glasses in the freezer
- Macerate maraschino cherries with lemon juice at the base of a cocktail shaker
- Add Lavender simple syrup, Doctor gin and ice
- Shake 15-20 times to mix
- Twist and rub a peice of lemon peel around the rim of each cocktail glass to add lemon oil
- Double strain mix into chilled cocktail glasses (this removes ice chards)
- Taste cocktail, then add a splash of chilled soda water to dilute, if you like.
- Garnish glasses with a maraschino cherry
