The intensity of flavour and acidity that you get from pineapple perfectly provides sweet and sour. Additional savoury notes from the rosemary syrup and a prickle of heat from the chilli makes this a veritable tropical jungle.
Ingredients
- red chilli-sliced up in rings
- 15 ml lemon juice
- 50 ml Pineapple juice
- 20 ml Rosemary simple syrup
- 100 ml soda water
- fresh pineapple
Instructions
- Muddle 4 slices of red chilli with lemon juice in a cocktail shaker until the liquid looks blush pink
- Add Rosemary simple syrup Pineapple juice and ice.
- Place lid on shaker and shake to mix
- Strain into a glass and top up with soda water.
- Garnish with fresh pineapple wedges
