There is so much to love about the intense sweetness of slow cooked tomatoes laced with dollops of spicy sausage and chilli swimming in this delectable ragu. A meal that says, your special “I love you”. Serve up delicious on Father’s Day
Ingredients:
- 2 tablespoons (Tbs) olive oil
- 4 cloves garlic
- 1Tbs fresh oregano leaves
- 1 x punnet of Cherry tomatoes
- 1 x 400 g can Cherry tomatoes
- pinch dried chilli flakes
- pinch salt flakes
- 1Tbs Lemon simple syrup
- 1 Tbs red wine vinegar
- 4 Italian pork sausages
- 1 Tbs butter
- 1/2 cup of Parmigiano Reggiano
Instructions:
Jammy Tomato
- Preheat oven to 150 degrees fan forced
- Heat a deep heavy Dutch Oven or French Le Creuset pan over medium heat
- Add olive oil to pan and cook garlic for 1 min or until it softens.
- Add cherry tomatoes oregano, dried chilli and pinch salt to pan
- Pour red wine vinegar and lemon syrup over ingredients
- Stir ingredients together and cover with lid
- Place pan in oven and cook for 1 hour to make the jammy tomato
- Use a potato masher to squash cherry tomatoes together to form the sauce base
Spiced Sausage Ragu
- Cut ends of sausages and squeeze out small nuggets of meat on top of the jammy tomatoes
- Cover with lid and place back into the oven for another hour (until sausages are tender & soft)
Pasta
- Cook a packet of Fettucine in a large pot of salted boiling water approx. (8-10 min)
- Drain pasta through a colander and keep 1/2 cup of starchy liquid.
- Toss pasta through the jammy tomato and spicy sausage ragu sauce
- Add starchy water, knob of butter and handful of Reggiano cheese
- Stir together until mixed
Serves 4
- Serve up in pasta bowls
- Add thinly sliced mozzarella on top.
- Eat with crusty bread to mop up the sauce
