This easy drinking sparkling rum based cocktail is a citrus twist on the classic mint mojito and is just the right balance of sweet and sour. This recipe serves 4.
Ingredients
- 45ml rum
- 40 ml lime juice
- 30 ml Bergamot simple syrup
- 1 bottle (275ml) of Rose Moscato (we use Innocent Bystander)
- 1 bottle (300ml) of pink grapefruit sparkling water (we use Daylesford and Hepburn Springs)
- Ice blocks
- Grapefruit slices
- Mint
Instructions
- Add a cup of ice to a jug
- Measure simple syrup, lime juice, rum and rose Moscato to jug
- Stir with a bar spoon to mix ingredients
- Top with sparkling grapefruit juice
- Stir and serve over ice
- Garnish with a 1/4 slice of grapefruit
