Bergamot Rose Mojito

This easy drinking sparkling rum based cocktail is a citrus twist on the classic mint mojito and is just the right balance of sweet and sour. This recipe serves 4.


  • 45ml rum
  • 40 ml lime juice
  • 30 ml Bergamot simple syrup
  • 1 bottle (275ml) of Rose Moscato (we use Innocent Bystander)
  • 1 bottle (300ml) of pink grapefruit sparkling water (we use Daylesford and Hepburn Springs)
  • Ice blocks
  • Grapefruit slices
  • Mint


  1. Add a cup of ice to a jug
  2. Measure simple syrup, lime juice, rum and rose Moscato to jug
  3. Stir with a bar spoon to mix ingredients
  4. Top with sparkling grapefruit juice
  5. Stir and serve over ice
  6. Garnish with a 1/4 slice of grapefruit
