Blueberry Lemon Fizz

The softness of the blueberries meets the boldness of the Lemon simple syrup and coconut water to quench any thirst.


  • 50 g blueberries
  • juice 1 lemon
  • 30ml Lemon simple syrup
  • 50 ml coconut milk (mocktail) or 50 ml Vodka (cocktail)
  • 100 ml soda water


  1. Lightly bruise the blueberries with a muddler in Lemon juice and Lemon simple syrup in the bottom of a cocktail shaker
  2. Add a handful of ice and coconut water
  3. Stir to combine.
  4. Add ice to two tumblers
  5. Divide mixture evenly between the two tumblers
  6. Top up with soda.
  7. Garnish with a few more blueberries
  8. Add a straw

Variation: replace Lemon simple syrup with Bergamot simple syrup for a lighter citrus taste and more colourful drink.
