Hibiscus Sparkler

This is a quick and easy festive cocktail that looks lovely and tastes delicious.


  • 30 ml Hibiscus simple syrup
  • Bottle of sparkling wine (alcoholic or non-alcoholic)
  • Sprig of rosemary
  • Sugar


  • Champagne Flute
  • Bar Spoon


  • Pour approx. 30 ml of hibiscus syrup into the bottom of the glass
  • Invert the bar spoon over the top of the glass
  • Slowly pour the sparkling wine over the back of the spoon so it gently runs down the side of the glass on top of the hibiscus syrup.
  • You should end up with a layered cocktail.
  • Wet the tip of the rosemary sprig
  • Dip the tip of the rosemary into sugar
  • Garnish the cocktail with the rosemary
