Mango Daiquiri

The blender has been my favourite kitchen appliance over summer. Blending ice with seasonal fruit and citrus juice has made drinking summer cocktails easy not to mention not wasting overripe fruit. Sweet and brimming with mango flavour this colourful drink. Similar to the strawberry daiquiri this boozy refresher is less like a slushie and more like a thick smoothie.

Ingredients

  • 1 x mango
  • 3 x limes
  • 1/3 cup Marmalade or Thyme Simple Syrup
  • 1 cup ice cubes
  • 1/2 cup white rum (leave out for mocktail)
  • lemon or lime wedge
  • coconut water (use as replacement for rum in mocktail)

Instructions

  1. Remove mango flesh from the pip and place in blender.
  2. Squeeze 2 limes and add juice to the blender along with simple syrup and ice.
  3. Blend all ingredients until smooth and pour into 2 margarita glasses.
  4. Slice lemon or lime into wheels or wedges to garnish glasses.
  5. Option to exclude the rum and use soda water.
