Mojito Mocktail

Inspired by novelty drinks and the challenge of reworking a classic cocktail to make it non-alcoholic I experimented with strawberries mint and green tea replacing the rum with our favourite non-alcoholic gin. Minty and refreshing this will make a perfect summer mocktail.  In this recipe you have total control over how this drink tastes and looks. Add more berries for a deeper red mojito. Add more mint. Double strain to remove all the fruit or if you want a thicker drink let some of the macerated berries pass through the cocktail strainer lid into the glass. There is no end to how you can vary this mojito from berries to watermelon the choice of summer fruit flavour is yours. Enjoy your berry delicious mojito!

Ingredients:

  • 1 green tea bag
  • 1 cup non-alcoholic gin (Banks)
  • 15 ml Lime Juice
  • 4-6 Strawberries (alternative fresh or frozen berries)
  • 4-8 mint leaves
  • 10 ml Lime Simple Syrup
  • 4 fresh or dehydrated lime wheels
  • 3-4 ice blocks

Instructions:

  1. Pour gin into a mason jar (recycled jam jar)
  2. Place tea bag in gin and steep for 20 min
  3. Muddle strawberries with lime juice, mint at the bottom of a cocktail shaker
  4. Add in lime syrup, tea infused non-alcoholic gin and ice and SHAKE!
  5. Add ice to 4 tall glasses
  6. Strain mixture equally across glasses (option to double strain here to remove all solids)
  7. Top glasses with soda and add in 2 lime wheels /glass
  8. Garnish glasses with mint sprig
  9. Serve with a straw
