Monte Carlo

Inspired by a delicious martini cocktail served at the Monte Carlo casino.


  • 45 ml Dry Gin
  • 45 ml Pineapple Juice
  • 15 ml Cointreau
  • 15 ml Thyme simple syrup
  • 20 ml Hibiscus Simple Syrup


  1. Chill martini glass with ice blocks
  2. Add ice to cocktail shaker.
  3. Pour gin, pineapple and thyme syrup into the shaker.
  4. Shake for 30 seconds to chill contents.
  5. Tip out ice blocks from martini glass.
  6. Add the hibiscus syrup to bottom of the frosty glass.
  7. Carefully pour the cocktail down the side of the glass using a spoon to slow the liquid and stop it from mixing with the hibiscus syrup.
  8. The pineapple cocktail layer should sit on top of the hibiscus syrup as a colourful layer.
