Pineapple Daiquiri

A balanced citrus rum cocktail with flavoured with tart pineapple and a hint of herbal sweetness.


  • 60ml White Rum
  • 20ml Cointreau
  • 20ml fresh Lime juice
  • 10 ml Rosemary simple syrup
  • 2 pineapple slices
  • 1/2 cup crushed ice
  • sugar


  1. Wet the rim of the glass with lime juice
  2. Dip the glass rim into sugar and set aside
  3. Add crushed ice, pineapple slices and liquid ingredients into a blender
  4. Blend at high speed until smooth
  5. Pour into a glass and add more ice
  6. Decorate with a wedge of fresh pineapple
  7. Serve with a straw
