Pineapple Highball

The intensity of flavour and acidity that you get from pineapple perfectly provides sweet and sour. Additional savoury notes from the rosemary syrup and a prickle of heat from the chilli makes this a veritable tropical jungle.


  • red chilli-sliced up in rings
  • 15 ml lemon juice
  • 50 ml Pineapple juice
  • 20 ml Rosemary simple syrup
  • 100 ml soda water
  • fresh pineapple


  1. Muddle 4 slices of red chilli with lemon juice in a cocktail shaker until the liquid looks blush pink
  2. Add Rosemary simple syrup Pineapple juice and ice.
  3. Place lid on shaker and shake to mix
  4. Strain into a glass and top up with soda water.
  5. Garnish with fresh pineapple wedges
