Sugar & Spice Butter Pancakes Recipe
Ingredients:
- 2 free-range eggs
- 2 cups all-purpose flour
- 2 1/2 cups Gippsland Jersey Butter Milk – Mill Grove Dairy
- Stick of Gippsland Jersey Butter – Mill Grove Dairy
- 1 heaped teaspoon baking powder
- 1 heaped teaspoon baking soda
- 1 teaspoon sea salt
- 2 tablespoons white sugar
- 2 teaspoons Botanikos Sugar & Spice Mix
Instructions:
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In a measuring jug, blend the buttermilk and eggs until smooth.
- Create a well in the center of the dry ingredients and pour in the buttermilk mixture.
- Whisk everything together until smooth.
- Heat a non-stick pan over medium heat and melt a teaspoon of butter.
- Once the butter bubbles, ladle 1/2 cup of batter into the pan.
- Cook until lightly brown on both sides, about 3-4 minutes. Flip when bubbles appear on the surface of the pancake.
- Keep cooked pancakes warm in the oven until all are ready to serve.
- Serve pancakes with a generous grating of butter and a sprinkle of Botanikos Sugar & Spice Mix, allowing the flavours to meld together deliciously.
