Sugar & Spice Butter Pancakes Recipe

Ingredients:

  • 2 free-range eggs
  • 2 cups all-purpose flour
  • 2 1/2 cups Gippsland Jersey Butter Milk – Mill Grove Dairy
  • Stick of Gippsland Jersey Butter – Mill Grove Dairy
  • 1 heaped teaspoon baking powder
  • 1 heaped teaspoon baking soda
  • 1 teaspoon sea salt
  • 2 tablespoons white sugar
  • 2 teaspoons Botanikos Sugar & Spice Mix

Instructions:

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In a measuring jug, blend the buttermilk and eggs until smooth.
  3. Create a well in the center of the dry ingredients and pour in the buttermilk mixture.
  4. Whisk everything together until smooth.
  5. Heat a non-stick pan over medium heat and melt a teaspoon of butter.
  6. Once the butter bubbles, ladle 1/2 cup of batter into the pan.
  7. Cook until lightly brown on both sides, about 3-4 minutes. Flip when bubbles appear on the surface of the pancake.
  8. Keep cooked pancakes warm in the oven until all are ready to serve.
  9. Serve pancakes with a generous grating of butter and a sprinkle of Botanikos Sugar & Spice Mix, allowing the flavours to meld together deliciously.
