I tasted a lot of orange in my afternoon drinks thus have a deeper appreciation of how important this fruit is mixed into classic cocktails from this part of the world. From Sangria to Negroni Mimosas to The Valencia is a taste of Spain in a champagne glass summer. Made with Cava – a high-quality sparkling wine from Spain of similar quality to French sparklers such as Champagne or bubbly Italian wines like Prosecco.
If travelling overseas is out of reach, then grab a bottle of Clasico 1872 Cava from Dan Murphy for around $10 to mix up this sparkling orange cocktail. Find some Spanish guitar music on Spotify close your eyes and imagine yourself by the Mediterranean coast- if only in your head.

Ingredients
- 60 ml gin
- 60 ml vodka
- 60 ml Bitter orange simple syrup
- 300 ml freshly squeezed orange juice
- 1 chilled bottle of Cava
- Ice Cubes
- Orange Wheels
Instructions
- Combine the gin vodka bitter orange syrup, orange juice and cava in a pitcher/jug
- Fill the pitcher with ice
- Pour into eight champagne tulip glasses
- Garnish each glass with an orange wheel -fresh is best
