Sparkling Sangria

Sparkling Sangria is a great brunch or summer cocktail! Use “in season” summer fruit Making it ahead makes it a great recipe for a party and the taste is peachy!



  • 2 cups of frozen mixed berries or 1 punnet each of strawberries (quartered) and blueberries
  • 1 cup apricot nectar chilled
  • 1/3 cup Brandy
  • 1/3 cup Thyme Simple Syrup (option to replace with Rosemary or Lime syrups)
  • 1 bottle Cava (chilled)


  1. Place all ingredients except the cava into a large pitcher.
  2. Cover and refrigerate for a half a day.
  3. When ready to serve add ice and cava
  4. Stir to mix before pouring into glasses.
  5. Make sure each glass has fruit and ice blocks
  6. Add a straw
