Old Cuban

This rum cocktail is one of the few known cocktails whose history is undisputed. The recipe was published in 2002 and created by New York bartender Audrey Saunders. It is considered the refined version of the popular long drink Mojito. Instead of soda water, the drink is infused with champagne. It is a classic in high end bars. The drink is “extremely palatable and incredibly fresh” with warm sweet spicy notes from the indigo syrup which balances the dry slightly bitter profile of the original Old Cuban.

Ingredients

  • 45 ml Premium White Rum
  • 15 ml Indigo simple syrup
  • 1 tsp (5ml) ginger lime cordial
  • Brut Champagne
  • 2 dashes of Angostura Bitters
  • mint leaves
  • ice

Instructions

  1. Place all ingredients except for the champagne and bitters into a cocktail shaker
  2. Add ice and shake vigorously
  3. Strain into a chilled cocktail glass
  4. Top with champagne and bitters
